I was craving pie one day and typically when I prepare food I just see what I have in my house to create a recipe from. This is so simple and healthy so I tend to have this for breakfast.
This inside of the pie is made from fresh Pear sauce then I mixed in oats. Then I topped it with a caramel date sauce. It’s so good warm, but just as tasty when it’s cooled off. Topped with banana nicecream is also amazing!
Ingredients for pie:
2 brown pears
1/3 cup almonds
5 medjool dates
1 cup gluten free oats
Ingredients for caramel date sauce:
6 medjool dates
1 teaspoon coconut oil
Pinch of Unsweetened shredded coconut
1/3 cup almond milk
Add 1 Pear to the vitamix and slice the other Pear into 4 circular slices for the top of the pie then add the rest of the Pear to the blender. Add in 5 medjool dates, 1/3 cup almonds. Blend together into a sauce. Then add to a mixing bowl and mix in the 1/3 cup of gluten free oats. Add that mixture to a small pie pan. Top with the four slices of Pear. Bake for 30 minutes at 350°.
Clean blender and prepare caramel date sauce in blender while pie cooks. Add all the ingredients for the caramel date sauce to the blender.
Take pie out of the oven and top with caramel date sauce. You will have leftover date sauce. You can use the leftover sauce to go fresh apple or Pear slices or even to top on banana nice cream.
Let the pie cool then enjoy!
