Gluten free Waffles ( vegan)

Well yesterday I found a recipe for almond flour waffles that I assumed I could easily veganize, but my waffle maker destroyed the batch. So today I made up my own recipe. I used almond flour as well as oat flour. Final product was really good!

I have learned though that I’m totally OK eating just one waffle and eating both of these made me pretty full until dinner.

Ingredients:
1 cup oat flour
1/2 cup almond flour
1 teaspoon vanilla extract
1/2 cup unsweetened shredded coconut ground into powder ( just ran it through my vitamix)
1/3 cup date sugar
1 cup almond milk

Directions:
Add all ingredients to a mixing bowl. Then pour batter into the waffle maker. Should make 2 waffles.
