Going on day number 3 of intermittent fasting so I like ending my day with great food. So happy I’ve successfully gained the skill of preparing different types of gluten free flat breads. Hoping to come up with a healthy gluten free garlic flat bread next.
I always have spinach in my fridge so I wanted create a spinach dip and was excited I kept it completely raw. These two paired together made such a yummy dinner. I’ll be having one last piece of fruit then my kitchen is closed until 11 am tomorrow morning. Truly hoping I see results from this way of eating, but I’ll see where I’m at this time next month.
Ingredients for flat bread
1/2 of a large sweet potato should equal 1 cup mashed
1 cup almond flour
1/2 cup tapioca flour
1 cup water
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon sea salt
Black pepper I added about 4 shakes
Directions:
I steamed my sweet potato but you can prepare it how you choose to be able to mash it. Once sweet potato is fully cooked mash it should be equal to 1 cup. Add that to a mixing bowl and add in the rest of the ingredients. Stir well and try to get it to be as smooth as you can. Hear a pan and spray with cooking spray I used coconut oil spray. It takes a bit to fully cook so be patient once one side is fully cooked flip and cook the other side. Then transfer to a baking pan and bake for 15 to 20 minutes at 350°.
Ingredients for spinach dip:
1 cup cashews soaked for at least an hour and drained
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon apple cider vinegar
1 teaspoon Sriracha ( optional gives good flavor though)
1/4 teaspoon sea salt
1/3 cup nutritional yeast
1/4 teaspoon dried basil
1 cup fresh spinach
1/2 cup almond milk
Directions:
Soak and drain nuts and add to a food processor. You need a food processor for this not a blender or you’ll end up with green cheese in a blender. Add in everything except the spinach and blend. Once it’s fully combined to a creamy consistency add in spinach. I chopped my spinach prior to adding it to the food processor. If need be to combine add extra almond milk. You want it thick but creamy.
