Well yesterday I made this exact meal, but cooked it differently and I hated it. So instead of boiling the sweet potato noodles I decided to turn them into curly fries and season and bake them. This way came out amazing and I wish I made a lot more.
1 large sweet potato ( spiralized)
1 teaspoon curry powder
1 teaspoon tumeric
1 teaspoon dried ginger
Few shakes of black pepper ( always use black pepper with tumeric for proper absorption)
Spiralize the sweet potato into curly fries and lay onto a baking sheet. Sprinkle on spices and stir with hands to coat all the fries. Bake at 350° for about 15 minutes.
I topped mine with cashew cheese sauce.
