Cream of Brussel Sprouts Soup


I love soup no matter what time of year it is. I completely forgot I had brussel sprouts in my fridge and when I saw them I thought to whip up a soup. With the help of my lovely vitamix in about 20 minutes I had an amazing soup to eat.

10 brussel sprouts
1/2 cup almond milk
1/2 cup water
1 tablespoon better than bouillon vegetable base soup broth low sodium
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon sea salt
Black pepper to taste

Add Brussel sprouts to a pot of water and bring to a boil. Lower to medium heat and cook thoroughly about 10 or 15 minutes. Drain the Brussel sprouts and add to high speed blender. Add in the rest of the ingredients.
Blend well and enjoy!
