I never tried pesto as a non vegan so I have no idea what it tastes like that way, but this simple pesto came out wonderful. I’m thinking of making a pizza with pesto sauce soon. The two main ingredients are avocado and fresh spinach.
1 ripe avocado
1 large handful of fresh spinach
1/4 cup pine nuts
1/3 cup almond milk
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon sea salt
A generous amount of black pepper ( I went a bit overboard, but do it to taste)
Juice of 1/2 lemon
Simply blend all the ingredients in a high speed blender and add to favorite pasta I used gluten free corn pasta.
